Creamy Pasta Salad


This creamy pasta salad recipe is a lovely addition to a cold meal during Summer.  I serve it up as a side dish with a green garden salad,  sliced meat and maybe a baked potato or potato salad.  My girls get very excited when they find out I've made pasta salad.

350 g uncooked spiral or shell pasta
1 medium sized carrot grated
1 stick celery finely chopped
1 medium spring onion finely chopped
1/2 red capsicum diced
2/3 cup grated tasty cheese
1/3 cup finely chopped parsley
1 x 300 ml bottle ready made coleslaw dressing or mayonnaise

½ cup of water

Salt and pepper to taste

Cook pasta as per instructions with a little salt

As the pasta is cooking prepare the rest of the ingredients in a large bowl.

Drain the pasta well.  When cool,  add to the dressing and mix well.  Chill in the fridge until ready to serve.

You can add or delete the spring onion,  capsicum or celery to suit your tastes

Serves 6 – 8 people as a side dish.

  1. My hubby doesn't like coleslaw because of the cabbage - this will make a nice substitute. Pineapple would give a nice tang too. I'll be trying this soon!

  2. Hi Wendy, this looks delicious. I will give this recipe a try!! Just a question for you - not related to this, but can you freeze chopped onions? Have you done this before? Many thanks.

    1. Yes you can freeze chopped onion. You'll need to bag it a couple of times as it can stink out the freezer. It won't defrost crispy so its really good for stews and casseroles.

      I've only frozen onion once. I didn't like to smell..

  5. This sounds amazing and I will be trying it for sure. My daughter loves my coleslaw (I add pineapple and tin corn to that) so I am sure she will like this also.

    Does anyone have a recipe for coleslaw dressing from scrathch?

    Thanks for sharing your pasts recipe! It looks so yummy. I am going to give a try, but will add my own twist to it to suit our taste. Hope you don't mind. I will be adding diced bacon cooked until crispy. the dressing will be mayonnaise, lemon and a teaspoon of wholegrain mustard.

    1. Please change it to suit your tastes. I only put capsicum, spring onion and celery in it if I have it on hand. Being super frugal, I won't go to the shops for just one or two items. It still tastes great no matter what you put in.

  9. Made this for our Australia Day BBQ...it was a big hit and fed a lot...and with the price of potatoes at the moment I think it was quite a saving on the equivalent amount of potato salad. My normal pasta salad is made with sliced olives, red onion, broccolini & pepperoni so this is a great addition to our summer menus. Thanks....Heather XXX
