Raspberry And White Chocolate Muffins

I just love a good homemade muffin and these raspberry and white chocolate ones are divine.  The raspberries add tang which balances out the white chocolate.  They look pretty too.

6 cups of self-raising flour
2 cups of white sugar
2 eggs
2 ¾ cups of milk
250 grams of melted butter
2 teaspoons of vanilla essence
200 – 250 grams of white choc bits
400 grams of frozen raspberries

Mix the flour and sugar together.

Melt the butter and add all other ingredients except the raspberries.
Place muffin / patty cases into the muffin tins.

Add the frozen raspberries and gently stir in until just combined.
Spoon mixture into muffin / patty cases until 2/3 full.

Bake at 200 degrees celcius for 20 -25 minutes until just golden on top.

Makes approx.. 24 large muffins.

Muffins can be frozen.

  2. Wendy I agree that the raspberries make these look gorgeous! What's not to love about those pretty swirls? White chocolate and raspberries must be one of my favourite food combinations ever, so you've inspired me to bake some too now. I commented to a friend the other day, that whilst fresh raspberries seems so expensive where we live...like $9 for these tiny punnets, you get soooo many it's ridiculous! Of course if you can snaffle them marked down when they're a bit mooshy, they're perfect for this. And really, people don't thing twice about spending $9 on a café lunch, or a burger meal, yet they won't buy raspberries which are such a superfood and so good for you, because they're too expensive. It's puzzling! I bet if you costed your muffins out, they'd be a twentieth of the price of a similar café muffin or cake. Fab job! Mimi....xxx

  4. They do look divine! Will have to give them a go. My 6 year old is coming home from school with a nearly full lunchbox but I don't think she would let one of these return home! Will have to give them a go. I enjoy your blog Wendy and although I wouldn't pass the test of being frugal, I am starting to learn and hopefully improve as I go along :-) thanks for the inspiration.     If you bake these muffins, you've started your frugal journey. If you buy petrol at it's cheapest, you're being frugal. Don't be too hard on yourself, I bet you are more frugal than you think..

  6. Lovely recipe Wendy. Just now with the problem with berries we should all check we dont have any of the problem ones in the freezer and take them back. I think I will use this recipe with fresh ones as I am thinking most berries would work.
    Also sometimes to make berries go further in a recipe I have added some berry jam as you kind of get that swirly pretty effect and colour! That is for those days when you double a recipe but dont have enough berries or apricots or whatever is needed!
    Muffins freeze so well and are good for lunch boxes, snacks, breakfast or presents! So some good go to muffins recipes are so helpful. Many thanks! xxx

  7. Thank you for sharing this recipe, they are my favourite, I sometimes add chopped Macadamia nuts too which make them extra special.
    The cheapest way to buy berries is big bags of frozen, all varieties, snap frozen while they are fresh.
